Food must be to 41F within 4 hours. -P. - Observed cooked yuca cooling at ambient air and not meet proper cooling rate. EHS observed item to be cooling at 107F for 60 mins cool at ambient air to 97F. EHS observed beans and pork both at 55F cool for 60 mins and still at 55F. CDI- PIC moved all items to the walk in cooler to quickly cool uncovered. See temp chart.
