CDI: Items were spread out onto sheet trays to cool to rapidly cool. Observed corned beef holding above 41F in reach in cooler. CDI: Product voluntarily discarded. Improvement made as facility is doing daily cooler temp checks. EHS recommends always taking temperatures of food within the coolers. REPEAT VIOLATION VERIFICATION REQUIRED Future violations will result in a risk control plan and/or permit action. Observed wall damage at top of stairs leading to the basement. Observed missing corner guard at entrance to kitchen from prep area. Observed missing floor tiles on the line in some areas and low and missing grout between tiles on cook line. Observed ceiling damage from leak at bottom of the stairs near walk in cooler. REPEAT VIOLATION Points not escalated due to PIC stating that they have appointments made with tile contractor and a general contractor to come and evaluate what work is needed.
