Observed PIC without knowledge of the holding process for chickens wings (EHS explained time procedures). PIC did not know where the tag was for the oysters in the cooler. PIC could not find test strips for QUAT sanitizer (EHS found test strips). PIC and employee stated that Lysol cleaner was used to clean food contact surfaces (Facility found QUAT). Observed cooling method and cold holding issues. PIC did not have the proper process for washing dishes without the sanitizer working for the dish machine.
