Chicken observed at 33F and not actively cooling.

Per PIC, items were cooked the previous day. Observed container of cooked noodles stored in counter top unit dated 10/26, but per PIC, noodles were cooked yesterday and removed from walk-in cooler today. Observed container of cooked pork stored in counter top unit dated 10/26, but per PIC, pork was cooked two days ago, frozen the day it was cooked, pulled from the freezer to the walk-in cooler yesterday, and placed in the counter top unit today. Ensure items are dated the day they are cooked/prepared and not the day they are removed from the walk-in unit. Observed container of chicken cooling in reach-in freezer dated 10/24. - CDI - PIC properly dated all items. PIC removed old label from container of cooling chicken.

Observed sliced lettuce wedges individually wrapped cooling in RIC. - CDI - PIC uncovered shrimp and moved container to walk-in freezer to continue cooling. PIC unwrapped lettuce wedges, placed on sheet trays, and moved products to WIC to continue cooling. 4-301.11 Provide equipment in number and capacity so that cooling, heating, and holding temperatures are achieved. - Pf - Observed both walk-in cooler and walk-in freezer full and at capacity. Cooling violations and storage order violations observed during inspection. - CDI - Cooling and storage violations corrected during inspection. If future cooling and storage order violations occur due to walk-in units being at capacity, risk control plan may be implemented or permit action taken.

Caution should be used to minimize food exposure. - Observed food debris on walls and floors throughout facility. Increase cleaning frequency to prevent buildup and maintain clean.
