Observed 2 large containers of lettuce with yesterdays date when PIC stated it was prepped this morning. CDI: correct dates were placed on the items due to PIC being able to verify they were prepped this morning. No points taken due to all other date marking being correct.

CDI: PIC voluntarily discarded item.

Observed pan of pico cooling in reach in, and a couple of pans of pico and cut tomatoes cooling in walk in cooler with lids on. Items were not cooling fast enough according to cooling calculation. CDI: Lids were removed from the items in the walk in cooler and pico in the reach in was moved to walk in cooler to cool.

Observed cut lettuce being stored in undrained water. CDI: PIC drained the water.

Observed water hose kept on with spray nozzle attached. CDI: PIC turned the water off and removed the spray nozzle.
