Ensure there is active managerial control to effectively monitor food handling and processes. CDI - PIC corrected most critical violations during inspection.

In the 2-door True standing cooler, observed salsas holding at 43F. At prep table, pupusa mix stored in melted ice holding at 43F. Maintain TCS foods at 41F and below. CDI - instructed employees to move salsas to another standing refrigerator, employees changed out ice used to hold pupusa mix.

In beer cooler, opened buckets of condensed milk and cooked pork fat without proper date mark. These food items are considered ready-to-eat and potentially hazardous. Ready to eat, potentially hazardous foods kept in the establishment more than 24 hours past opening or preparation shall be date marked using date of prep/opening as Day 1. Date marking on container should be either a preparation date, or a consume-by date. CDI - PIC date marked foods.

Potentially hazardous food shall be thawed at a water temperature of 70F or below, under refrigeration, as part of the cooking process, or in a microwave oven and immediately transferred to cooking equipment. CDI - instructed PIC to move thawing foods to standing cooler.

Observed brick used to prop oven. 2-door True refrigerator observed holding at 45F. Equipment must be kept in good repair to ensure proper function and food protection. Do not use brick to prop oven as it is not easily cleansable. Repair/replace leg on oven. Service True refrigerator so that ready-to-eat, potentially hazardous foods are holding at 41F and below.

Specification sheet for ice machine does not show a backflow preventer inside unit. Prevent backflow or back-siphonage at each point of use in a water supply system by installing an approved backflow device. I will return within three days (20Aug2022) to verify that a backflow preventer has been installed on ice machine.
