General CommentsVerified thermometer calibrations in an ice bath at 32F. Gave new 2017 Food Code guidance during inspection. PIC wants to leave raw shelled eggs out at room temperature near the grill for orders. Gave and discussed using the Time as a Public Health Control policy. Uploaded facility 2-compartment sink Variance Approval Letter into account.

The ambient temperature of this unit was 56-57F. TCS foods shall be maintained at 41F or below. PIC discarded all pre-packaged items in the cooler and will only serve non-TCS foods until the unit is repaired. I will verify that the unit is repaired within the next 3 days.

FOOD EMPLOYEES shall wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed FOOD; clean EQUIPMENT, UTENSILS, and LINENS; and unwrapped SINGLE-SERVICE and SINGLE-USE ARTICLES. Employees were new. Educated employees on wearing hair restraints and they donned hats during the inspection.
