20 3 Proper cold holding temperatures No No Yes Yes No 3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P Observed boiled eggs in prep unit 1 , watermelon sitting on top of prep unit 2, salsa and salad dressings on front counter left sitting out salsa at 60 degrees, ranch dressing at 69 degrees. CDI discarded boiled eggs and watermelon, salad dressings and salsa only out 2 hours moved to walk in cooler to return to proper temperature. Measured salsa after 15 minutes and had cooled to 50 degrees. Repeat violation for cold holding.

CDI all products discarded. Observed house made pickles made using hot brine method according to the recipe on site held for 1 month recipe states to hold three weeks. Advised that if this process is used item can be held for only 7 days. CDI discarded.
