Unit is still missing bar spacers, PIC explained they have ordered them. PIC had food on ice, CDI-PIC added food containers onto a bigger container of ice to keep cold until unit is fixed. Food items cooled down to 41F or below. Found tomatoes in reach-in covered at 52F, cheese in cold drawer at 45F, PIC was not sure why they were warm, CDI-PIC voluntarily discarded. Much improvement from last inspection, de-escalation in points. Repeat Violation.

Cold air must flow around product to remove the heat. -Pf Observed chicken shredded by a food employee, employee taking back to the walk-in at 78F, in a large bowl covered in saran wrap. CDI-Instructed food employee to open wrap to allow for air flow.

Caution should be used to minimize food exposure. Observed air vent with black build-up on it by the dish machine.
