Also observed two containers of raw shrimp stored above RTE mayo and salsas. CDI- PIC was able to correct the storage order. NOTE: EHS provided the PIC with a MCPHD storage order poster.
14 3 Food-contact surfaces: cleaned and sanitized No No No Yes Yes 4-601.11(A) Equipment food contact surfaces and utensils shall be clean to sight and touch. -Pf - REPEAT- Observed meat slicer, metal containers, produce slicer, and other utensils stored clean, according to employees, that had food debris left on them. Also observed several stacks of metal containers with sticker residue left on them and stored clean according to employees. Items were moved to three comp sink to be properly washed before the next use. A VR will occur no later than 6/21/19 to ensure all food contact surfaces are clean to sight and touch. NOTE: PIC was informed if the violation is noted again during an inspection or visit permit action may occur.
18 1.50 Proper cooling time and temperatures No No Yes No No 3-501.14(A) Quickly cool cooked foods within 2 hours from 135F to 70F; and within a total of 6 hours from 135F to 41F. -P- Observed a large container of pork at 49F. According to the employees the item was cooked last night and placed in the walk in cool. The item did not meet the proper cooling parameters. CDI- PIC voluntarily discarded the item. Also observed chicken (49F), beef (89F), and pork (91F) all cooling in the reach in cooler covered. 60 mins after the first temp taken the items were still at initial temps. Cooling did not occur. CDI- PIC was able to move the items to the walk in freezer in shallow pans to quickly cool. EHS observed proper cooling rates being met by the end of the inspection. See temp chart. NOTE: EHS provided PIC with a MCPHD cooling method and parameter poster.

PIC voluntarily discarded the items. A VR will occur no later than 6/21/19 to address the chronic non compliant item and to ensure all TCS foods are cold held at 41F or below. NOTE: EHS provided PIC with a MCPHD TPHC form. EHS also informed PIC if the violation occurs again during an inspection or visit permit action may occur.

CDI- PIC voluntarily discarded all TCS foods without a date.

Also observed smaller covered containers of pork, chicken, and beef not meet proper cooling rates during the inspection in the reach in cooler. CDI- PIC voluntarily discarded the large container of pork and placed the smaller pork, chicken, and beef in the walk in freezer to quickly cool. NOTE: EHS provided PIC with a MCPHD cooling method and parameter poster.
