Observed plates, bowls, small serving bowls, and ramakins soiled with food debris on line and on clean rack near dish machine. CDI items moved to sink for cleaning. Repeat. 4-602.11 Clean the equipment and utensils used with nonTCS foods as required to avoid contamination. Observed ice machine with black debris build up at ice chute. 4-602.11 Clean the equipment and utensils used with TCS foods as required to avoid contamination. -P. CLean thermometer before use and storage. Observed themometer used and stored with out cleaning. Repeat.

Observed floor drain in kitchen backed up at begining of inspection where waste water settled in the middle of the cook line. PIC stated it occured yesterday and had someone come out this morning to fix issue. Had facility stop food prep process until drain repaired and area cleaned. ENSURE NO FOOD PREP OPERATION WHEN THERE IS A SEWAGE BACK UP.

Observed floors, walls, and ceilings in need of cleaning. Had facility clean floors where back up drain was located before starting food prep.
