Ensure there is NO BAREHAND CONTACT with any ready to eat foods. CDI employee voluntarily discarded slices of toast and EHS instructed employee to wash hands and donned gloves.

Observed FCS of deli slicer with heavy food debris build up. Ensure to increase cleaning frequency. CDI PIC placed plates and slicer to 3 comp sink to be washed properly.

CDI PIC provided proper date label for items. 3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P Observed opened/prepped fresh mozzarella, sausage dip, beef stock, coleslaw (2/19), pasta (3/11), chicken wings (3/9), and beef sausages not date marked, held past 7 days, or improperly labeled. CDI PIC voluntarily discarded all TCS food items not date marked properly and held past 7 days.

Ensure to store off the floor. 6-404.11 Designate a separate area for items that are not for use and are being held for credit, such as dented cans or recalled products. -Pf Observed two dented cans stored with other cans on dry storage shelf. CDI PIC removed dented cans.
