Use warm water, soap, scrub 15 secs, rinse, and dry without recontaminating hands. -P- Observed PIC wash hands after entering the unit to don gloves and prepare RTE foods. At the end of the hand wash the PIC used bare hands to turn the faucet off. This action recontaminates the hands. CDI- PIC was provided with instruction on how to properly wash hands. EHS observed proper hand washing after the PIC was instructed on how to wash.

CDI- PIC voluntarily discarded the RTE hot dogs. 3-302.11(A) Separate unwashed produce from ready-to-eat foods. -P- Observed unwashed produce stored above RTE salsa in the low boy reach in cooler. EHS did not observe any physical cross contamination. CDI- PIC was able to correct the storage order.

According to the PIC all items were opened/prepared yesterday. CDI- PIC was able to correctly date the items.

Operation is limited to cooking and assembly of pre-prepared foods.
