Observed internal portions of microwave heavily soiled. 4-602.11 Equipment Food-Contact Surfaces and Utensils-Frequency - P All equipment must be properly washed, rinsed and sanitized at least every 4 hours. Observed employees only spraying food contact surfaces off, no sanitizing procedures. CDI employees knives taken to be washed rinsed and sanitized. Maintain at least a 2 minute contact time for sanitizing.

Observed potatoes, multiple containers of eggs, egg whites and butter holding out of temperature control. See temperature chart for temperature observations. Manager stated maintenance has already been contacted concerning issue; however cooler may not be used until cooler can maintain all products below 45F. Potatoes, eggs and egg whites were rapidly cooled in large 2 door reach-in coolers. See temperature chart for cooling temperatures. Butter voluntarily discarded. Butter must be held below 45F at all times or on TPHC procedures.

Items on display for customer self-service must be displayed in a way that customer cannot contaminate the remaining product.
