Observed two soups in the outdoor walk-in cooler that were not dated as required. Observed facility labels foods for more than 4 days however several coolers were between 41-45F which only allows a 4 day hold. Items included cooked chicken, pork, milk, tir fry mix, cauliflower mash, etc. Coolers must be 41 or below in order to date for 7 days. Observed dry fermented sausages that were held past 7 days and not in the original casing. It was unclear if they are labeled keep refrigerated in the original package however they are not in the original casing. Other items such as prosciutto were label keep refrigerated. CDI - items discarded.

Return visit required.

Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Observed salsa, pork, ham, and chicken tightly covered while cooling. CDI - items were opened or sheet panned and were cooling properly in the walk-in.

Observed the ceiling with damage and not easily cleanable in the kitchen. Observed cleaning needed of the bar floors and beer cooler.
