Cooler not operating properly, items disposed of by PIC. Observed two reach in coolers stored on top of each other in kitchen holding raw chicken, raw shrimp, and raw fish at 48-58 degrees. One pan of fish that had been placed in cooler approx. 2 hrs earlier was moved to freezer. All other out of temperature foods voluntarily disposed of by PIC. Observed only two working refrigeration units in facility, a small reach in cooler and a small non approved bottle drink fridge. ITS issued for lack of refrigeration space.

Observed 3 coolers not properly working, need repair or replacing.

Observed hole in wall behind baseboad accross from cook line handsink. Observed baseboard trim coming off the wall next to stove in kitchen. 6-501.114 Discard items and litter stored on the premises as they are not necessary to operation and maintenance. Observed storage area at end of hall with several non used pans and other kitchen equipment piled up, need to be neatly arranged and stored off the floor for ease of cleaning and to prevent pest harborage or remove the non used items. Observed non used old fridges and buckets of towels, and a few other various refuse at back door needing removal.

GENERAL COMMENT: Intent to suspend issued for lack of refrigeration space with 3 malfuntioning refrigerated units. Facility can continue operating with the two working refrigeration units on a temporary basis due to size of menu. PIC advised not to cool any foods due to lack of refrigeration space until more refrigeration is installed. Call 980-314-1643 for a re-inspection.
