2-301.14 When to Wash - P - Observed several employees moving in & out of the kitchen through back door, switching from different tasks, without washing hands. Corrected during inspection - staff educated when to wash hands. Recommend installing an additional hand sink close to back door to encourage hand washing.
Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation and (f) during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing tasks. |

Discussion with PIC indicated the current drain strainer is very small and will clog easily if the food strainer is not used. Replace the drain with the kind used underneath 3-compartment sink.
