4-501.112 Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures (Pf) The mechanical dishwasher was recently replaced. There was some confusion where Ecolab told them that it was using chemical sanitizer, but a test strip read 0ppm. They have been operating as a high temp dishwasher, but the temperatures were topping out at 150F. In a mechanical operation, the temperature of the fresh hot water SANITIZING rinse as it enters the manifold may not be more than 194F, or less than 180F: Pf CDI after several adjustments, the temp rose to 174 on the puck. Service call placed. |

3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food, Hot and Cold Holding (P) Observed Danimal yogurt cups in a bowl with some ice sprinkled on top. PIC stated that the practice of saving cups that were placed in service had ended. They were sitting on the line for the duration of lunch service. The danimal yogurt cups and some ice cream cups were placed into the walk in freezer after lunch service was completed. Cup observed at 48F. The 2 door reach in unit was being cleaned and having shelves adjusted, unable to get a good read on the temp. Milk in the unit was observed at 46 and an egg sandwich was observed at 47 due to doors being held open. The walk in cooler is holding TCS foods at 42F-43F. Cold TCS foods must be maintained at 41F or below. Keep yogurt in the cooler, or place in ice bath during food service times, or include with TPHC for time policy and discard at the end o each service. Service call placed for walk in. CDI - Cups voluntarily discarded by PIC. Items moved from walk in cooler to walk in freezer. Items in the 2 door reach in moved to freezer for rapid cooling. |

3-501.15 Cooling Methods (Pf) Recently prepared foods like ham sandwiches and lettuce salads were placed into the 2 door reach in and walk in cooler to in sealed containers cool. Nearly 2 hours later they were not yet 41F. Rapidly cool TCS foods withing 2 hours using ice baths, vented containers, the freezer or other approved method. CDI - Foods moved to the freezer for rapid cooling. |

4-302.12 Food Temperature Measuring Devices (Pf) PIC was unable to provide a working fine-tipped food temperature measuring device. The last one was no longer working. (B) A TEMPERATURE MEASURING DEVICE with a suitable small diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin FOODS such as MEAT patties and FISH filets. VR - Verification required by 6/11 to confirm fine tipped thermometer has been obtained. Several dial type thermometers are available and in use. |

4-501.11 Good Repair and Proper Adjustment - Equipment (C) Repeat - The display screen on the walk in cooler is displaying the message "off" and not showing temperatures. The utensil drawer on the prep table is held together with duct tape. The microwave, slicer, and hotbox are all currently set aside unused and awaiting repairs. Repair/replace if needed. Keep equipment in good repair and working order. |

Excess moisture is accumulating on walls and ceilings when the high temp dishwasher is running. Ventilation hood systems and devices shall be sufficient in number and capacity to prevent grease or condensation from collecting on walls and ceilings. There are still plans for new hood installation. |
