The warmer tray was not fully inserted into the warmer. Chicken nuggets in the back of the tray were observed at 150F. TCS items shall be maintained at 135F or above during hot holding. CDI: Chicken nuggets were voluntarily discarded.

PIC stated items are held on the buffet for temperature and typically discarded after 4 hours for quality. PIC stated they usually have to add ice to the cold bar to maintain temperatures. A very small amount of ice was observed in the cold well. TCS items shall be maintained at 41F or below during cold holding. Coleslaw was voluntarily discarded by PIC. VR: Verification required by 5/29 to verify cold holding temperatures of the buffet.

The chicken walk-in cooler door is unable to properly latch and torn gaskets were observed on the ready-to-eat walk-in cooler. Maintain equipment in good repair.
