If TCS foods are prepared from ingredients at ambient temp, foods shall be cooled within 4 hours to 41F or less. CDI-PIC adjusted cooling methods by uncovering containers. There was no TPHC written procedure on-site for these food items. CDI-PIC moved foods to walk-in cooler for rapid cooling. REPEAT VIOLATION
