3-501.14 Cooling (P) Observed multiple containers of covered diced tomatoes in the walk-in cooler while in the cooling process. Foods were not cooled at correct rate within 30 mins. Cooked TCS foods shall be cooled within 2 hours from 135F to 70F and within a total of 6 hours from 135F to 41F. If TCS foods are prepared from ingredients at ambient temp, foods shall be cooled within 4 hours to 41F or less. CDI-PIC adjusted cooling methods by uncovering containers. Foods were cooled within the correct parameters for T3. See temp log for T1, T2, and T3. |
