The True Stacked Cooler had an ambient of 43.4F during the inspection (no TCS foods were stored in it at this time). Loose floor panel noted in the walk in cooler and the walk in cooler door was not fully closing today. Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted. Equipment shall be maintained in good repair. Points maintained at half for improvement since last inspection. The cooler gasket was replaced.

REHS verified that the dish machine was reaching at least 160F food contact surface temperature with their thermometer. (B) In hot water mechanical WAREWASHING operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the UTENSIL surface temperature. CDI- Person in charge placed an order for temperature test strips during inspection.

Cleaning needed of the ceiling vent cover in the employee restroomas well as minor dust accumulation noted on vent covers in the kitchen. All physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. 6-501.16 Drying Mops (C)-REPEAT- During inspection today noted one mop that was drying with the mop head up and laying/dripping onto the handle. After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies. When drying mops store them with the handle up to avoid contamination from the mop head. Points reduced to half for improvement, the floor tiles around mop sink were replaced.
