Baked chicken was cooling in the split door reach in cooler, this equipment is not designed for cooling. Spoke with PIC and the decision was made to send only enough for one meal at a time instead of lunch and dinner portions so no cooling is needed. 3-501.15 - Cooling Methods: Quickly cool foods.
