Wooden crates and milk crates were being used as storage surfaces in the walk in freezer and in the storage room where the mop sink is located. Wooden crates are not smooth and easily cleanable. Remove wooden crates. Milk crates are only approved for storage of milk containers. Do not use milk crates for storage of other items. Light was not functioning under the rotisserie vent hood. Replace bulb or find the switch that turns it on. Repeat violation. Seal was cracked on the Baker's Aid proofer. Replace seal. A wooden shim was pushed between paneling of the vent hood for the fryers. Make repairs if needed to avoid having to use a wooden shim. A set of racks in the walk in cooler are beginning to show signs of deterioration. Recommend replacing this set of racks soon. Gaps in caulking were observed around the walk in freezer door. Seal these gaps. The faucet for the ready to eat food prep sink showed deterioration. Recommend replacing this faucet.
