4-203.13 - Pressure Measuring Devices, Mechanical Warewashing Equipment: Pressure measuring devices that display the pressures in the water supply line for the fresh hot water sanitizing rinse shall have increments of 1 pound per square inch or smaller and shall be accurate to plus or minus 5 pounds per square inch in the range indicated on the manufacturers data plate. The pressure gauge is reaching about 13psi the requirement on the data plate is 20psi, have the machine serviced and repaired so the pressure is correct within 5 psi of the recommended pressure. Replace the missing light shield, there is separation between the wall and floor on the back wall of the walk in cooler, recommend placing adhesive cove base there to prevent water from getting to the walk in cooler panel.
6-501.12 - Cleaning, Frequency and Restrictions: All physical facilities shall be maintained in good repair and shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. Cleaning needed on floors and the FRP.
Overall general cleaning and removal of equipment that is not being used is needed so there is less clutter and more space for clean utensil storage and single use storage. |
