Hot TCS foods must cool to 70F from 135F in the first two hours of cooling and dwon to 41F or less in the next four hours.

Use refrigeration or ice to aid in cooling TCS foods- proper pans and cooling rack will not work in a 70F or more kitchen without extra aid,
Product must be actively cooling once below 135F. |
