No food in the refrigerators were not marked to indicate the discard or use by date.
All TCS foods must be marked to indicate the day or date products are to be discarded, not to exceed 7 days with day 1 as the day the product is made. The PIC was provided with a date-marking poster in Spanish. |

4-302.14 Sanitizing Solutions, Testing Devices (Pf)
Provide test strips for testing sanitizer to ensure sanitizer strengths are met. No sanitizer test strips could be found during the inspection.
I will be back in 10 days to verify that chlorine test strips have been purchased.
4-303.11 Cleaning Agents and Sanitizer, Availability (Pf): Sanitizer shall be available at all hours of operation. There was no sanitizer made at the start of inspection. CDI-the PIC made sanitizer to 100 ppm. |
