3-501.16 Maintain TCS foods in cold holding at 41F or less. P Observed deli items (see temp log) in the open case from 45-50F. An ambient air temp of 54F was achieved but unit may have been in defrost mode. PIC discarded all deli items that were not 41F or below and placed items at temp in different case. I will be back in 3 days to verify that the unit is holding product at 41F or below. |
