CDI: The stainless steel cleaner was moved to a lower shelf during inspection.
33 1 Proper cooling methods used; adequate equipment for temperature control Yes Yes No 3-501.15 (B) (2) - Cooling Methods: Observed southwest chicken salad, deli meat, cheese, and tomatoes cooling from prep with a tight fitting lid or plastic covering. Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. CDI: The plastic coverings and lids were vented during the inspection. Repeat violation. 4-301.11 - Cooling, Heating, and Holding Capacities: (Pf) Observed grab and go reach-in cooler at an ambient air temperature ranging from 43 to 46 F. Additionally, all items in the unit were holding above 41 F. Provide equipment in number and capacity so that cooling, heating, and holding temperatures are achieved. CDI: This equipment will be repurposed and no longer used to hold TCS items.
