CDI- items voluntarily disposed of by PIC. As this is a repeat problem with this equipment after previous repair, recommend replacing the prep cooler. Will follow up that cooler is working or replaced within 10 days.

Pf Observed the prep cooler's make table by griddle un-able to properly cold hold foods at 41 or below. Have cooler serviced or replaced as needed to ensure proper cold holding capacity available. Will follow up within 10 days. If not repaired or replaced an ITS will be issued. 3-501.15 Quickly cool foods. Use open/vented shallow pans, large ice baths, and active stirring methods. Cold air must flow around the product to remove the heat. Pf Observed just portioned macaroni cups in make table of prep cooler at 49. Just cooked mushrooms trying to cool in make table of improperly working prep cooler at 70 after two hours. Fresh prepped items should chill to 41 or below using proper cooling methods before trying to cold holding. Macaroni and mushrooms voluntarily disposed of by PIC. Observed two deep, covered, and stacked tubs of lettuce at 50 degrees in WIC after one hour of cooling. CDI- PIC moved lettuce to separate flat pans to speed cooling, observed cooled to 41 degrees by end of inspection.

Observed prep cooler #3 with some condensation build up at bottom, cooler needs service to correct problem.

Observed stainless steel trim behind breading station at wall with half inch gaps that need re-attaching to wall and/or sealing/ caulking. 6-201.13 Provide a wall to floor joint that is sealed and coved when flood cleaning methods are used. Observed PVC baseboards and floor covering baseboards in kitchen, dish area, and BOH prep area that need proper cove base.
