Tripe had been in the 1door reach in, stored inside of a tall(3') plastic container that was left uncovered overnight.-CDI discarded as it cooled too slowly(>6hours and not at 41For less). Use approved methods for cooling as discussed.
Training guides given today to PIC for training of staff and alos a checklist for the manager to use to gain managerial control of food safety.(cooling, reheating, storage order, health policy, cold hold, thaw, handwash guides also given today). |

Repair ceiling in restroom and replace acoustic ceiling tiles with vinyl, cauilk or close all cracks/gaps in restrooms on walls and floors, and remove and replace any rough/or gapped caulk that is present in the restroom and recaualk so where the wall meets the floor, for example, is smooth- nonabsorbent- and easy to clean off.
