P Kitchen worker was only using 2 compartments of the 3 compartment sink due to a major sink leak in the first compatment. Worker was washing dishes in the second compartment with detergent and sanitizer solution, then rinsing the sanitizer in the 3rd compartment. Food code requires a 3 step process of washing, rinsing, and sanitizing in the 3 compartment sink vats, and allowing sanitizer solution to air dry onto dishes to be effective. CDI- PIC coached worker on proper washing, rinsing, and sanitizing steps, and 3 compartment sink properly set up for proper washing, rinsing, and sanitizing procedure.
