4-501.110 The hot water temperature to sanitize in a single tank conveyor dual temperature machine is 160F. Pf Observed sanitizer for the hot water warewash machine measuring 143F. Hot water must leave the manifold at 180F to achieve a plate surface of 160F. CDI-No points taken due to establishment already using dishwasher to wash/rinse, and then spraying chlorine sanitizer of 100PPM on dishes after machine washing to sanitize and air dry. PIC stated that service has been performed on dishwasher but it is still not working as intended. REPEAT VIOLATION |
