During inspection today 1 pan of roasted chicken skewers were found stored under a container of raw shrimp. Both containers were wrapped/ covered. CDI by PIC relocating the RTE product. Upon questioning PIC stated that the shrimp had been placed in the cooler shortly prior to the inspection. REHS notes that the walk in cooler is at capacity for the full menu of items and suggests increasing the frequency of deliveries to reduce stress on equipment or adding additional cold holding equipment. |

(REPEAT) Additional cleaning under equipment such a prep sinks and hand sinks, and along base boards throughout kitchen area.
6-501.11 - Repairing: Floors, walls, and ceilings including the attachments such as soap and towel dispensers; light fixtures; and heat/ac vents shall be maintained in good repair.
Multiple cracked floor tiles throughout the kitchen and the cracking noted around the door frame to the dry storage area. Multiple ceiling tiles were noted with grease splatter staining near the cook line. Repair/replace damaged items. |
