3-501.16 (A)(1) Time/Temperature Control for Safety Food, Hot and Cold Holding - P -- (0 POINTS): Observed a tray of chicken stored at 130°F for less than 2 hours in the hot holding unit. Also, fries in the 4-door warmer on the side closest to the dish area read 128°F for less than 2 hours. Store TCS foods at 135°F or above when hot holding. The temperatures taken of the fries after reheating and while in hot holding all read correctly. The units seemed to be working properly, so it could not be determined why the temperatures dropped. Because the foods were prepared and placed in the holding units/serving lines less than 2 hours prior to checking, they were reheated in the convection oven over 165°F. |

7-102.11 Common Name-Working Containers - Pf -- Observed two red buckets typically for sanitizer used as detergents (for the dining room tables and to clean other items in the cafeteria. Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. All of the red and green buckets used for washing (green) or sanitizing (red) were not labeled. Please keep these buckets labeled. The buckets were relabeled to correct the violation. |

Except for toasters, mixers, microwave ovens, water heaters, and hoods, food equipment shall be used in accordance with the manufacturer’s intended use and certified or classified for sanitation by an American National Standards Institute (ANSI)-accredited certification program. Remove the domestic blender from the premises and replace with a commercial blender, if a blender is still needed.
