3-501.16 (A)(1) Time/Temperature Control for Safety Food, Hot and Cold Holding - P -- Observed one tray of potato wedges being stored at 120-125°F in the left side hot holding cab. Store TCS foods at 135°F or above when hot holding. These items were placed on an emergency TPHC to correct the violation. Discussed TPHC with the manager on certain food items frequently served that are hard to hold temperature. REPEAT 0 PTS due to improvement since last inspection |
