When talking through with PIC the process, they may have cooled down when they were placing the hot dogs in the buns. Recommend having additional staff working to bun the hot dogs to speed the process up or not placing them on buns until served. CDI- Hot Dogs were placed on TPHC. When held hot, TCS foods shall be maintained at 135F, or greater, at all times.
47 0 Equipment, food & non-food contact surfaces approved, cleanable, properly designed, constructed & used No No No 4-205.10 Food Equipment, Certification and Classification (C)- Observed a Coca-Cola beverage cooler being used to cool and hold cold TCS foods. When checking the unit, was unable to verify the equipment is rated to handle TCS foods. Need to replace the beverage coolers with some rated for holding food if wanting to use for TCS food storage. Food equipment shall be used in accordance with the manufacturer’s intended use and certified or classified for sanitation by an American National Standards Institute (ANSI)-accredited certification program. If the equipment is not certified or classified for sanitation, the equipment shall comply with Parts 4-1 and 4-2 of the Food Code as amended by this Rule.
