Dispensing utensils shall be stored : in food items, on clean portion of food prep surface, in running water of sufficient velocity to flush particulates down the drain, or in a container of water if that is at least 135F. PIC removed scooper washed, rinse and sanitization. Discussed proper ways of storing ice cream scoop going forward. |
