PIC checked unit earlier and tit was holding TCS foods cold at 41 or less- CDI most meats moved WIC to quickly chill down- other foods will be used in the next hour- do not use again until repaired. Contact EHS when corrected- complerer within 3 days or contact to discuss. |

4-501.11 Good Repair and Proper Adjustment - Equipment (C)
3 comp. sinks patch is rough and cracking making it hard to clean and in bad repair. Screws holding part of sink together are gapps and parts pieced together for this sink are gapped. This repair must be smooth and easy to clean.
hood unit has holes in metal that are hard to clean. Some torn gaskets in smaller cold units today. Rusted racks in walk in cooler. Walk in cooler has a rusted door, rusted metal on ceiling, and ceiling of walk is rough and hard to clean. Saw has rust on it and that piece needs to be repaired. Keep equipment in good repair and easy to clean.
Saw blade needs to be repaired or replaced.
Rust on many pieces of equiopment, gaps, and hard to clean areas. |

Floors, walls and ceilings throughout need to be repaired and cement floors have no sealant on them to make them nonabsorbent.
Ex. Ceiling and walls in walk in cooler that has beer inside and in bad repair in spots. Repair all areas of floors, walls, and ceilings where no longer smooth or otherwise in poor repair with gaps or missing pieces. All floor/ wall junctures must be rounded. . Floors, walls, and ceilings in food prep areas should be smooth, easy to clean and ASAP non absorbant. Repeat violation
