Several dishes stored as clean observed with food debris on their food contact surfaces. The attachments on the lower shelf of the robot coupe storage rack had food debris and build up on them. The hand mixer and attachments stored under the prep counter had dusty buildup. Food-contact surfaces and utensils must be clean to sight and touch. CDI, the items were removed and sent to the dish area to be cleaned. |

CDI, the containers of pasta were removed and reheated in the tilt skillet to 173F. |

There was some food debris and black buildup on the racks in the walk-in cooler and dry storage room. There was food debris on the chemical storage shelf at the dish sink. There was food debris on the robot coupe and chopper tables under the machines. There was food debris on the lower prep tables and there was also build up on the Hobart Mixer where food had splattered and not been cleaned. There was also built up on the handles of the coolers and on the drawers of the prep tables. Nonfood contact surfaces of equipment shall be cleaned at frequency to prevent accumulation of soil residue. |
