Observed baked potatoes, open hotdog, homemade pasta and potato salad, etc that had been made >24 hhours since make/cook with no date marks- CDI all back dated. prior-CDI discarded. Veggie soup had an old date on lid but was made a few days ago-CDI date changed to be accurate.

Walk in cooler ,freezer, and other older items workin\g but still indie must be in good repair. Great strides seen. . Shelving that is rusting or no longer in good repair needs repair or replacing(thank you for replacing racks in one walk in).
Some rusted racks still as well. Discard any food contact surface in bad repair, and resurface blackmarks off of cutting boards as discoe- call with questions.
Only some equipment items are in bad repair with chipping or peeling material on them. |

Need to clean all floor, wall, and ceiling surfaces. Repair all areas of floors(in walk in coolers and in kitchen and dry goods area) where grout is no longer smooth, ceiling tiles that are damaged/ missing, walls where board has come off/ paint peeling or are damaged. All floor/ wall junctures must be smooth and easily cleanable. Replace acoustic ceiling tiles in kitchen as they need to be vinyl ceiling tiles that are easy to clean. Keep all items off the floor to facilitate cleaning. Repeat violation. Bad repair throughout including restroom. Caulk sinks to walls.
