Equipment food contact surfaces and utensils shall be clean to sight and touch. CDI: PIC put these dishes in the three comp sink to be washed.

PIC stated that the containers of chicken wings were cooked the previous day at 4:00. Quickly cool cooked foods within 2 hours from 135F to 70F; and within a total of 6 hours from 135F to 41F. CDI: PIC threw out the pans of chicken wings.

PIC stated that the wings in the cooler were cooked the night before. Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. CDI: PIC threw away the pans of chicken wings in the walk in cooler and PIC stored the meatballs uncovered on a cooling rack.
