One of the two available hand wash sinks was found to not be equipped with a supply of paper towels. CDI by PIC immediately placing paper towels at that hand sink. NOTE: The second hand sink in the same room was found equipped with paper towels. |

4-903.11 - Equipment, Utensils, Linens, and Single-Service and Single-Use Articles: Single-use and single-service articles shall be kept in the original protective package or stored by using other means that afford protection from contamination until used.
A couple of plastic single-use food trays were found stored loose with their food contact surface turned up on shelf with other such single-use utensils. CDI by those loose ones being inverted and turned so that their food contact surfaces were turned down. |

4-501.11 - Good Repair and Proper Adjustment: Equipment shall be maintained in good repair.
Observed rust accumulation on some of the metal shelving in the walk-in freezer in the meat cutting room making it no longer easily cleanable on all surfaces. That shelving will soon need to be replaced. |
