Replace the old can opener with an approved one that does not require use of a tool to allow proper cleaning. 4-501.11 - Good Repair and Proper Adjustment: Equipment shall be maintained in good repair. Found the gasket of the walk in cooler has torn. Additionally, the air drying rack in the dish room has exposed layers of paint. Have this repainted to be smooth.
