Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. Pf During inspection several small cups of Pico de Gallo and guacamole were found holding around 49F in the open face self service cooler. Per the PIC these items were prepped less than 4 hrs prior earlier today. PIC stated that they had been placed in the walk in to cooler for 30mins - 1 Hr however due the main prep working leaving early they had been placed in a buggy sealed and stacked up and were likely not fully cooled. CDI by having product moved to the walk in cooler and spread out/opened to quickly cool.

During inspection 1 bug light was found on the wall over the prep table/ plastic wrap machine. CDI by PIC unplugging the device and stating that it will be fully relocated later today.

During inspection the water system access panel next to the hand sink was found to have some rust damage and peeling paint. Repair/repaint the damaged panel.
