Record date on the tag when the last shellstock from the container is used. Store tags in chronological order for 90 days. Pf Container of clams were observed in cold drawers with no tag. After asking employee, he got the tag from their container and it was dated as if clams were consumed/sold on 4/1/26 even though clams in the batch were still available. CDI by Employee who removed date and placed in container to be dated once final clam was sold.

P Employee was observed temping chicken without sanitizing probe before. CDI by PIC who had employee discard chicken and sanitize probe.

Pf Potato salad was observed walk in cooler cooling with lid secured. CDI by PIC who removed lid to allow for proper air flow.
35 0 Approved thawing methods used Yes No No 3-501.13(E) - Thawing: REDUCED OXYGEN PACKAGED FISH that bears a label indicating that it is to be kept frozen until time of use shall be removed from the reduced oxygen environment: (1) Prior to its thawing under refrigeration as specified in (A) of this section; or (2) Prior to, or Immediately upon completion of, its thawing using procedures specified in (B) of this section. Tuna was found thawing in walk in cooler in reduced oxygen packaging with a label to remove from packaging before thawing. CDI through education and PIC having employee's puncture packaging.
