4-601.11 - Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils: Non-food contact surfaces and utensils shall be clean to sight and touch. Observed crumbs in a few cabinets throughout facility and on top of equipment. Clean crumbs from inside electrical panel on sandwich line, spill under hoses in cabinets under soda fountain at drive through, and crumbs in drawer warmers on sandwich prep line. Observed soiled hood screens over deep fryers (grease). PIC says the hood screens are old and need replacement as grease deposits are difficult to clean. Clean equipment at a frequency to preclude build-up and replace equipment where applicable. |
