The products were placed in a stand-up cooler in plastics containers with tight lids. 3-501.15 - Cooling Methods: Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. Pf CDI: PIC removed from stand-up cooler and moved to walk-in cooler. The lids were also offset to allow for ventilation. Once the products were moved to WIC, time/temp cooling parameters were met.
