4-101.19 - Nonfood-Contact Surfaces: Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material.Observed rusting to shelving in dry storage area as well as dish pit area. Observed wooden pallets being used to avoid floor contamination in walk in cooler. May not use absorbent material due to cleaning.
4-501.11 - Good Repair and Proper Adjustment: Equipment shall be maintained in good repair. Observed damage to gasket in back prep area ice machine. Facility can not find a replacement due to age of unit. No points taken due to regular cleaning. No observed food debris or microbial growth on gasket. |
