3-304.14 Wiping Cloths, Use Limitations (C) - Observed one quat sanitizer bucket with less than 100 ppm concentrations. One bucket has "rinse" on it with wet wiping cloths stored in them. Cloths in-use for wiping counters and other EQUIPMENT surfaces shall be held between uses in a chemical sanitizer solution at a concentration specified under § 4-501.114. Quat sanitizer concentration are 200-400 ppm based on manufacturer wall handout. Wet wiping cloths cannot be stored in soapy water for the "rinse" bucket as the soap does not sanitize and kill microbes. |

4-501.11 Good Repair and Proper Adjustment - Equipment (C) - REPEAT - Observed dish machine finally repaired and functioning at proper hot water based on the data plate. For today the 2 door cooler has been down since 3/2/2026 and no food was stored in it. The machine is able to maintain an ambient air of 35F, but the fan would create a lot of noise and leave a burning smell, so PIC turned off until maintenance looks over it; The milkbox left side gasket is hanging loose and needs to be resecured. EQUIPMENT shall be maintained in a state of repair and condition that meets the requirements specified under Parts 4-1 and 4-2. EQUIPMENT components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. Maintained at half points due to improvement on repair of dish machine. Keep up with the work orders! |
