FOOD shall be protected from cross contamination by separating fruits and vegetables, before they are washed. CDI, PIC rearranged the apples to where the washed apples are on the top shelve top and unwashed on the bottom.

Also noted a fly swatter stored on the drying rack with clean pans. EQUIPMENT FOOD-CONTACT SURFACES and UTENSILS shall be clean to sight and touch. CDI, the dirty utensils were placed at the 3-compartment sink. The fly awatter was removed and all pans were placed at the 3-compartment sink to be washed, rinsed, and sanitized.

Outer openings of a FOOD ESTABLISHMENT shall be protected against the entry of insects and rodents by: Filling or closing holes and other gaps along floors, walls, and ceilings; Closed, tight-fitting windows; and Solid, self-closing, tight-fitting doors. Add a door sweep 6-501.111 Controlling Pests Found several pest along the corners of the wall in the dish machine area. The PREMISES shall be maintained free of insects, rodents, and other pests. Facility has installed multiple traps in the dish machine area; however, adding a door sweep could further assist in preventing pests and insects from entering the kitchen

Shelving, prep table legs throughout are beginning to rust. The hinge on the ice machine is broken and preventing the unit from being in good repair. Equipment shall be maintained in good repair. Kept at half for previous repairs being made. PIC was able to provide a pending work order for the ice machine.
55 0.50 Physical facilities installed, maintained & clean No Yes No 6-201.11 Floors, Walls and Ceilings - Cleanability (C) - REPEAT- Observed a cracked and damaged floor tiles underneath the dish machine and outside of dry storage room doorway. Paint on walls in walk-in cooler is peeling and in need of scraping and repainting. Wall in dry storage room is also in need of a new coat of paint. Door to walk-in cooler and freezer is losing its coating and needs to be resealed to facilitate easy cleaning and prevent absorption of moisture into the wood. Establishment must provide floors, floor coverings, walls, wall coverings, and ceilings that are designed, constructed and installed so they are smooth and easily cleanable. Repair or replace tile, repaint walls listed and reseal walk-in doors. PIC stated that the school building was built in the 60s. 6-501.12 Cleaning, Frequency and Restrictions (C) The walls in the storage area required cleaning. Black build up was observed in the corners. All physical facilities shall be maintained in good repair and shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
